The pricing, everyday relevance and fast-casual service model point to an accessible, well-positioned brand—not an expensive premium restaurant. The first outlet should feel more organised, trustworthy and polished without adding unnecessary design costs or pushing up prices.

Ambition versus realistic planning

The ₹1 lakh daily sales target can only become a realistic plan after studying transaction capacity, average bill value, delivery commissions, food cost, staffing, rent and repeat business. TSF will build a practical plan around real numbers rather than present the target as a guarantee.

What “CK first” means

Build the CK around actual needs

The CK should standardise preparation, production, packing and dispatch while reducing dependence on the founders. Its size and equipment will be decided only after mapping the production needs of the 26 August menu’s detailed recipes and methods, along with outsourced and in-house product details.

Why “Mithai” is not yet part of the name

The brand promise must match Sanataa’s capabilities

Sanataa currently has limited in-house mithai production. Adding “Mithai” to the name before finalising production, sourcing, quality standards and supply consistency could create a promise the opening team may not be ready to deliver.

Mithai and farsan can remain prominent across the store, festive calendar and gifting range. “Mithai” should be considered for the name only after Sanataa proves it can deliver the category consistently as a core brand offering—not simply as sourced products.

Reducing dependence on the founder

If only Varsha ji can prepare every item correctly, the CK and second outlet cannot scale reliably. Recipe transfer, batch testing and team ownership must begin before the fit-out is complete and launch pressure begins.

Hire each role when the work requires it

Accounts and project coordination are needed early. Production and food-safety leaders must join before trials, followed by store and logistics staff before stock transfers. The outlet manager and service team must be ready before mock service. Hiring should follow the project’s needs—not simply fill job titles.

Working model

TSF provides one approved brief and coordinates all specialist inputs. The internal Culinary Team is included within TSF’s scope. External specialists work under separately approved proposals or contracts, while the Sanataa Team retains final approval and contracting authority—including responsibility for budgets, capital expenditure, hiring, licences and daily operations.
