Positioning versus affordability
The pricing, everyday relevance and fast-casual service model point to an accessible, well-positioned brand—not an expensive premium restaurant. The first outlet should feel more organised, trustworthy and polished without adding unnecessary design costs or pushing up prices.
Ambition versus realistic planning
The ₹1 lakh daily sales target can only become a realistic plan after studying transaction capacity, average bill value, delivery commissions, food cost, staffing, rent and repeat business. TSF will build a practical plan around real numbers rather than present the target as a guarantee.

Why “Mithai” is not yet part of the name
The brand promise must match Sanataa’s capabilities
Sanataa currently has limited in-house mithai production. Adding “Mithai” to the name before finalising production, sourcing, quality standards and supply consistency could create a promise the opening team may not be ready to deliver.

Equipment decisions must follow the menu production review. The final outlet design requires accurate site measurements. Product claims need Culinary approval. Go
Expand when product quality, financial performance, customer demand, team ownership and CK supply are stable. Learnings from the first outlet must be documented, and the next format must be chosen with a clear purpose.

Delay or stop expansion if the founder is still involved daily, repeat business is weak, sales depend on discounts, complaints continue, CK supply is unreliable, stock differences cannot be explained, or the next investment would put pressure on the existing business.
